I used the "Beef Pastrami" recipe from the Bradlet recipe site:

except I used flak steak from restraunt depot, since I wasn't in the mood to do a lot of trimming.

I used the dry cure, then the rub and smoked about 3.5 hours with Hickory (in the MAK 2 Star) until the IT was ~150F

wrap in plastic overnight, and slice.

The RD Flank steaks are a little crappy for grilling, but they made great pastrami.

In an interesting note, there was a sweetness to the pastrami that could not be explained from the ingredients in the rub. The only sugar was in the cure mix, same mixture I always use.
