New from SE Texas
« Reply #-1 on: June 09, 2015, 10:30:47 AM »
I have been smoking meat since college where my roommates and I learned how to tenderize the toughest and cheapest cuts of meat by cooking it low and slow.  Left a few other forums due to some discussions becoming abusive instead of informative.  Found your site during a google search while looking into the Pit Barrel Smoker.  Thinking of adding this as my chicken smoker to my stable of smokers. I use a Lang off-set, Traeger 073, BGE, and thinking of adding the aforementioned PBC.  Looking forward to learning some new tricks from ya'll!

That is for sure.

I stuck my toe into a few forums over the past few weeks. A couple things I noticed:
  • Many pictures of completed cooks - no recipe, instructions or explanations
  • A bunch of "internet pictures" pretending to be cooks
  • A lot of name calling and otherwise unfriendly nonsense

Net net - I am happy to spend my limited time and energy here. Thank you to all the members of LTBBQ!

Glad you found us!

We are all about having fun - and being friendly and respectful...( unless you county he good natured teasing we have around here :D ). You will not ever see a snotty, arrogant response to any questions. We do not act like that here - mostly because many of us are " internet forum-abuse refugees" that want to build a place for fun - and knowledge. Hey - if you enjoy cooking - WHY make it stressful? So - we don't. Actually - having fun is a rule here. We don't have many of those rules by the way - mostly the "Golden Rule" should be the prevailing one.

And you have a great collection of cookers.

What the PBC is noted for is being a "power cooker" - usually above low and slow - but not as hot as a grill. Best chicken cooker in the world IMHO....
But, we have adventuresome embers that have played with it a lot - and got theirs to low and slow range for LONG cooks. And - folks have figured out how to get hotter temps than we originally expected.

I think of it as one of those cookers that you can use so many different ways  that it is hard to limit it's description to just one thing.
BBQ is neither verb or noun. It is an experience.
