It has been one of "THOSE" weeks this week. Lots of long hours so I decided Friday afternoon to have a solid dinner to cap off the week.
I stopped by the butcher on the way home and picked up a Choice Tenderloin. It was a nice thick cut nearly two inches thick. I nabbed the steak and headed home. Grabbed a King Crab leg out of the freezer on the way in the house. I decided to try something with the steak that I have seen a lot of you guys post about. I was a little leery to try something new on a $15 steak. I normally like to cook them on the gasser at 500+ degrees to get that sear. This time I tried what I have seen the pros here refer to as a reverse sear.
I put the steak on the smoker at 375 degrees. When the IT hit 125 I took it off and put it on the gasser to get the nice sear on the outside. I grilled it to 137 IT and took it off to rest. I put the crab leg on the smoker about half way through the steak cook. I have never done crab legs like that either - have always steamed them.
The steak was incredible - probably the best steak I have ever cooked. I could not believe the consistency of doneness throughout. instead of med well on the outside and med rare on the inside I had an evenly cooked medium rare throughout the entire steak. The crab was fantastic as well. I will be cooking steak like this from now on.
