Getting a late start, had some nasty weather past couple days. Getting this ready to mix with 5lbs of medium grind GB. To much a hassle to emulsify like a smooth bologna. Going into cloth and fibrous casings, gotta do some experimenting.

D'OH

The beef is still kinda frozen.

I'm going with 5 T of the mix, will taste and add more if needed.

I was not going to grind but i wanted to try the grinder freeze wrap which worked great.

Stuffing into cloth and fibrous. Diff size cloth chubs for an experiment.







Hung chubs at room temp for an hour before hanging in smoker at 130* no smoke for 1 hour.

I told my wife that i am not going to be drilling holes for hanging in the 5th wheel so i just got some oak dowels to put across the shower top rail.

Here are the chubs hanging yesterday to cool. Been a long time since i used cloth casings for chubs. Will take them off and slice tomorrow.

Red Barn Bologna has been brown bagged and frige for 2 days now. Time to take out and lookee.




Did 2 chubs in fibrous and 2 in cloth.









All purdy.



I like to slice the ends off before vac sealing.


Larger chub i cut in half.

The ones in the fibrous look darker. Would there be a difference in taste or just looks? What would you use next time?
