A question, Rick:

Lebanon Bologna is readily available around here (both the sweet and regular kinds), but not Lancaster Bologna, so I've never had it. How does Lancaster bologna differ from Lebanon Bologna, and will you be hot-smoking or cold-smoking this?  Lebanon Bologna is cold-smoked and dry cured.

I love Lebanon bologna (the regular - not a huge fan of the sweet).

I love Lebanon bologna (the regular - not a huge fan of the sweet).

Im sure that what you have and lancaster county regular lebanon are pretty close in taste. The reg and sweet originated in lancaster county dutch amish community and spread out from there. This uses cure 1 and will get a 130* smoke with a meat IT of 150. If you used cure 2 it would be dry and hard, yes you could cold smoke it also. I have done sweet with venison and cure 2 stuffed into a beef middle.

In Elizabethtown, PA at Groff's Market, they sell another one called farmer's bologna.  It tastes like a cross between regular and sweet Lebanon bologna.  That is the one my wife likes the best.
