Navy Beans Cooking Today!

I've been wanting some white beans for a while so today I decided to cook a pot of dried Navy Beans Blue Runner  Navy Beans to be more precise. I like their dried beans.

Got some leftover ham in with onions, celery and bell pepper cooking down before adding the beans and chicken stock. I can't wait! Might make some corn bread too.

Since I'm hanging around the house today cooking Navy Neans I decided to get a jump on tomorrow evening's dinner. Rice and gravy, well, at least the meat and gravy part. Borwned up some beef(no, I don't remember what cut it was)seasoned simply with salt and black pepper. Removed the meat and caramelized some diced onions then returned the meat and added water. Let that come to a light boil and turned down to a low simmer  with the lid on to braise until fork tender.





Beans are coming along nicely.

Well, the beans are done!
 


I wisked a half stick of butter into them to emulsify and get 'em a bit more tasty.

Will be putting a cheesy jalapeno cornbread in the oven shortly.

Never put butter in before but after seeing your cook I will next time.

The butter whisked in as it melts mixes just right smooths it out nicely and helps to thicken the gravy.


So the cornbread came out pretty good.





Not a bad pot of beans but honestly I've made better.
