Pepper Stout Beef on the Menu Today

will be making this for the first time today. I couldn't find a 4lb chuck roast so I have a couple 2lb cuts. They've been resting overnight with kosher salt and heavy black pepper. Will smoke them till 165 and into the pan and oven to finish. Will be adding Green and Red Bell Pepper, Jalapenos, Garlic, Red Onion, Worcestershire and of course Guinness. I have some hoagie rolls and provolone cheese and some horseradish spread to finish
