Grandson's BD request, BBQ Spare Ribs
« Reply #-1 on: June 27, 2016, 08:04:19 PM »
At my Grandson, who grills his own Chicken, 12th BD request 4th July weekend Dinner I prepped 4 racks of SamsClub ribs.  Not sure about other stores but our SamsClub ribs are spot on with tons of meat.

Before Trimming:

Trimmed and Rubbed to St. Louis style.  They will spend some time marrying up in VacBags:

And the cook goes on:

The Grid Iron is chucking along at 225 degrees with three racks for the next four hours. Ever hour I will spray with a mixture of apple juice and apple cedar vinegar.   Love the smell and look of the smoke when burning Perfect Mix pellets.

Ribs on for 4 hours and time to come.

Ribs are laid meat down in this mixture top and bottom:

Back in the pit at 250 degrees for two more hours:

Out of the foil and back on at 225 degrees to set the glaze for one hour.

Three racks of ribs minus 2 ribs ready for VacPac.

VacPac for the freezer and reheating for Sunday Birthday Dinner.
