.....the tweaks are, I used Way Out West rub from Savor Spices for more flavor body, and this was cooked/smoked on the pellet grill not baked in an oven, and finally Kate used tomato paste thinned with water as the topping, I used paste and Bulls Eye bbq sauce.
Ok first pic got everything assembled. Next in the mixing bowl. Mixed up and refrigerated. Now here's the surprise EGGS! The other half mix goes on top. Into the pellet grill @ 175F for an hour along with a pan of veggies. In there are yellow zucchini, onion, carrots, peppers, garlic, tomato, a couple jalapenos, a few oil-cured olives, evoo, s&p, and oregano. After an hour veggies get covered, loaf gets a topping, and temp goes up to 350F until an IT of 160. I believe about 70 minutes. Plated with instant potatoes and gravy. A fine and comforting meal!
