It was a long week. Back from vacation and right into long hours.... so today I stayed out of the heat and humidity. Didn't even look at a grill!
I did want comfort food tho, so PC it had to be. Now first off, I don't have one of those new models with a robot built into the lid! I guess mine is manual labor!
My meat was frozen, but no problem. I used a pkg of beef shorties and a pound of sweet Italian sausage. Cut it up, browned in a bit of lard, set aside, browned some onions, garlic, and carrot. Added the meats and 1/2 C red wine. Brought to hp for 20 minutes. Released pressure and added tomatoes, paste, brown sugar, oregano, basil, S&P, and fresh basil. Brought to hp for twenty more minutes. All done! Served over tratolle pasta, with a bit of parmesan grated atop, a salad, and a glass of pinot. Oh yeah! And all it took was 1 hour total!
