Speed Goat Summer Sausage

I was lucky enough to take an Antelope with the bow this year. Today, I'm doing a test run of 6 lbs of summer sausage.
3 lbs of ground poke, 3 lbs of goat and the usual cast of characters.
Going on the Bradley with 3 hours of Pecan smoke.

I hope your goat turns out okay.  The two times I have tried to cook antelope were disasters.  Maybe it needss to be made into a SS.

Art, it smells good. I also went with more Pecan smoke than normal.
I will post a slice shot in a day or two. I want it to rest for a day or two in the refrig.
