I watched one of the America’s Test Kitchen episodes recently. They made Tagliatelle with Proscuitto and Peas. It looked really good, and fairly easy to make. Couldn’t find tagliatelle, but I did find some fettuccine rolled up like tagliatelle. I did add a lot more prosciutto and peas to the recipe. It turned out better than I expected. The America’s Test Kitchen version added some shredded gruyere to the grated parmesan. I took this another step by using some apple smoked gruyere that I bought recently. That little hint of smoke was right on point.

I’ll make this one again. It would be easy to double the amount of pasta for four to six people. It is kind of rich. I hope it doesn’t kick my gout into high gear tonight.
