Thought of this one the way home tonight from work. I eat Taco salad but not with a bowl (to high in carbs) but i wanted a bowl to eat so I changed up the Mozzarella/Almond crust recipe to one I thought would work and it did rather well if I say so my self.
I used 1 cup mozzarella shredded cheese and 3/4 cup almond flour with one one tsp cumin powder
Again like before I mixed the almond flour into the slightly melted cheese add the cumin powder and mix well. I formed a ball of dough and laid out 2 sheets of wax paper to roll it out with. Once it was round and thin I sprayed a small Pyrex bowl and placed it on the sheet of dough, I then flipped the dough and bowl over so the dough would drape the bowl just as it should to become a taco bowl.
Next, I brushed with butter then place on a foil wrapped cookie sheet so it would be easier to remove. Next placed it in the oven preheated to 425 and cooked for 14 mins when it was golden brown. I let it cool for 30 mins so it wouldn't tear pulling it away from the bowl (which it did but not bad) next time I will use the bowl covered with parchment paper.
It was real good and satisfied my craving for a taco bowl. Yes it has a few more carbs then I wanted BUT sometimes you just got to eat something good that's not totally carb free
