I have to wait to drive into either Waco or Bryan to shop at the larger markets for a better meat selection but these caught my eye yesterday so I grabbed them.
Beef center cut finger ribs....seemed to have some beef on em so why not?
Rubbed one rack down with a brisket rub and the other with a hickory rub. Back membranes were removed
Onto the MAK with the temp setting at 250
