Been wanting to try smoking a meatloaf, and today was the day. Went with a pound of lean ground beef, a pound of Italian turkey sausage, panko crumbs, eggs, diced onions, red peppers and mushrooms, garlic, salt, pepper and some Killer Hogs The Barbecue Rub. I was a little nervous because the meats were so lean. Onto the Memphis at 200 degrees for an hour of smoke (Lumberjack MHC pellets), then cranked it to 350 for the rest of the cook. Took it to 165 internal (since I used ground turkey), glazed it with BBQ sauce the last 20 minutes. Boy was it good! My wife said she's never making meatloaf in the oven again.
