OK guys, I can poke fun at myself for turning a 10 lb brisket into a 12 hour overnight affair (2300 to 1100 start cooking to eating lunch). I'm going to count this one as a win though. I think that was as good a job as that cooker (the Copperhead) can do on a brisket. Spot on bark, texture and moisture. Smoke flavor was subtle but very present, and I even got a pretty smoke ring. You can't ask for any more than that. Next test is exactly the same method on a choice to see how much impact the prime had. I expect the same results since (let's be honest) Sam's shouldn't be selling that quality of brisket and marking it/pricing it as prime. I have had much better choice packers for 3/4 of the price. Since I had a $10 coupon, this one only cost me ~$25. No tests once I fire up the stick burner. It's been too long. I just need to get around to it. Hard when I get results like this from the pooper.
