Another Stick Day
« Reply #-1 on: January 23, 2013, 12:03:29 PM »
Got 5 lbs of 90/10 GB and 1 lb of poke mixed.

I been mixing by hand so the push meat wont get hot and smear.

Had this mix in the fridge overnight so i re hand mixed and stuffing/smoke this morning.

I get lazy and dont feel like tying so i pinch the ends.

Pinch the middle where your over hang is.

Give it twist. (it wont want to twist but who's the boss....EH)

Pinch the other end now.

Had enough for a single too.

Hanging in my new RV dry closet for 1 hour.... HAHAHAH

Smoke time. PID running 130 thru 170

Thanks everyone.

Got to get a look and taste.

All good, now wrap time.

Cut to length and got 45 sticks.

1st wrapping in brown butcher paper, 5 to a wrap.

2nd wrap in waxed one side freezer paper.

Now where what, huh.
