What is that Russian dessert drink? A clear liqueur? Or just vodka
The best vodka I ever had. Got it from a more than 80 years old russian client who's been recently in Moscow nd brought it from there.
how was the stuff on top?
It was the perfect match to the pork chops. Although it wasn't crispy, it was exactly that what I wanted to have. I had something like that years ago in a restaurant and always wanted to try that out. To get the topping crispy put it on the chops from the start and cook them at about 320-350°F.
Did you have to cook that topping a little before, or sauté the onions? Or did it finish on the pork to your liking?
I sauteed minced onions and blended them with 150 g sour cream and 2 tablespoons of mustard. Then I added some parsley and panko meal. Let that all cool down.
After searing the pork chops, put that mixture on top and go on cooking the chops until an IT of 140°F is reached.
