Brought out a frozen pkg of Costco loin ribs, thawed and seasoned with a rub of OO, 1:1 of garlic salt and black pepper. Fired up the PBC and 20 min later added the three racks of ribs. ( I had cut them in half ) I had placed a Mav temp probe in the sweet spot to moniter and record. The temp soon setteled @ 315* F average and I setteled in to watch the 2nd half of the Supper Bowl. Two hours into the cook I said to self, " self you had better check those ribs." Yep, they were well over done with the lower ends charred. What was I thinking? Kimmie might have liked them, but they were too done for my taste.
Well we ate them anyway.
On the plate with some beans. The salad was great.
Obviously I need to check much earlier, try and get the temp down to near 250* F av. and get to know this cooker. The taste of those that wern't charred was pretty good.
