Mama Said I could do the Turkey breast in the Primo for Easter. I asked how about some hickory smoke "Absolutely not" She replied, I said how about some apple smoke, "yah, that sounds good" I don't get it
I went ahead and seasoned the bird with salt and pepper and some Savory spices Mo-Rockin -Chicken rub.
I started the Lump coal with BBQ starters from wally-world and prepared it for indirect cooking.
I put the bird on the opposite side of the fire and added some Milts Apple pellets to the lump coal which actually gave it a good hour and a half of smoke as I sprinkled them around the outer edges of the Lump.
The green stuff
Oh, If you get a LLL on your maverick E-372 its because it is to cold and you did not defrost your turkey all the way, once it hits 34° F it will continue to work
Boy, was I pulling my hair out
E.T. is all done and resting on the counter for 20 minutes unfoiled
I buttered down the turkey every hour for three hours.
Maybe not the 70's traditional slice but I like it cut cross the grain
Plated, did my best
The turkey really turned out moist and the Mo-rockin- Chicken rub was a excellent choice, it had a sweet yet savory herb flavor just right for Turkey.
