I like to buy the whole and cut it myself. My wife likes thinner steaks and done medium well. I like mine thicker and done medium rare. I cut her a thin one and me a thick one and freeze them in vacuum bags two to a package. I thaw them out and I can throw them on the grill and they get done the way I want them at about the same time. Happy, Happy.
Oh, and the little ends get chopped up into cubes for chili meat or stew meat.
