Gonna try something different. I read that you can cut shrimp on a bias on the underside to keep it from curling. Going to try that with lobster.
Let’s see what happens
The wash. Two egg yolks whipped with ¾ cup cold water.
The dredge. ½ cup corn starch ½ cup cake flour. What we are looking for here is a super tender crust. Combine and into the wash. Then a thin coating of dredge.
Fry at 350 for about 3 minutes. They will not be very brown because of the corn starch. Just a hint of golden. The one on the left was the tail cut on the bias. Did’nt work. Skewered the other.
Mixed up some honey mustard sauce and melted some clarified butter. Let’s eat!
