I once worked for a chef that always boil the ribs with a mirepoix until they were cooked to death. Then he'd throw them on the salamander and slather them with Cattlemen's sauce... He called them "world famous" ribs...

They were garbage!

I never order ribs when out. I just assume they will stink. ;)
