This is a recipe that LTBBQ member Lost Arrow posted a while back. I used beef in lieu of pork, here is my version.
Found these Chuckie's at Sam's while buying ribs. Olive oil with a good coating of Kosher salt and CBP.
I was in the mood for some charcoal flavor for this cook, so onto the WSM at 250 until it hit 165. No wood added to the charcoal.
Once they hit their IT, I threw them on top of this. Covered with foil and bumped up the temp to bring Chuckie's up to 200 degrees.
Pulled the meat off and put the pan back on the smoker to reduce some of the liquid.
Shredded the meat (with fingers) and mixed it all up.

Very tasty meal. Will probably throw a sprig or two of Thyme in there the next time.
