Today is the day when I am going to attempt my first Tri Tip roast. Yesterday, it was a 106 degrees and at 10:30 AM last night it was 91. This morning we had black sky's and there was thunder, lightning and rain. The current temperature is 75 degrees and it went as low as 69 degrees. At least it is now nice and comfortable to be outside and turn on the pellet smoker.

I have been marinating both chicken wings and the Tri Tip for two days. I created my own marinade and don't ask me what I did because I can't remember and I do not write things down. These were separate marinades for the wings and the beef. My mother never measured a thing and followed not written recipe, she just knew what to do and by taste. I guess that I follow that same line of thinking. I also went to the web to review about four different rub recipes for wings. I took the spices that I like from these recipes and tossed them together to fit 3 lbs. of chicken wings.

I intend to cook the wings first as they will be served as appetizers and then the Tri Tip. Based upon your input, I suspect that I will cook the Tri Tip for about two hours at 225 or until it hits 130 degrees internal temperature. It looks like the big storms are way West of us and that I will have a clear afternoon. I will update as progress occurs.

I just pulled the chicken wings and prepared them for the grill.



They are now on the smoker doing there thing.

An hour later, I added the Tri Tip. I had a few pieces of bacon left over so I could not resist and put it on top of the Tri Tip.



I also prepared some poblano pepper cleaning out the inside and filling them with three different cheeses: chili con queso, cream cheese, and pepper jack. I subsequently, wrapped them in bacon to add more flavor and to prevent the cheese from melting out.



The two silver balls are Texas grown sweet onions in which I skewered the tops and loaded it with butter, minced garlic and tiny bit of salt. Then I packed everything into the smoker including two very large baking potatoes and there were 2 additional strips of bacon that I thought would be a good snack for the cook.



I hope that within the next couple of hours that everything will be done. I have to remember to put a glaze on the wings for the last half hour.

Here's the finished product for the Tri Tip just the way we had hoped it would come out.






Smoked Texas Sweet Onions




Stuffed Poblano peppers with 3 cheeses.



Baked potato from the smoker.



The meat was better than expected and we will do this again.

Ok, I now have a #2. on my new cooks to try. #1 Bacon wrapped individual ribs coming up Thursday.

Smoke: I don't know if we would like a Trisket. We like our meat rare to medium rare. The Trisket if I understand it correctly would be very well done to the point of pulling it apart. Which is ok if it is a chuck roast slow cooked for 12 hours or a brisket. Then you have no choice in order to get the meat tender. This Tri Tip was very tender and it was tasty.

Next up - I think ribs on the wood smoker or an 11 lb brisket in the freezer for the fourth of July.
