I thought this would be cool to show. This is how I make breaded pork loin sandwiches for the shop. First start with a center cut loin. Trim all fat and silver.
Then portion it out to 1/4 pound each.
Run through the tenderizer a few times.
Then dipped in 1/2 whole milk 1/2 butter milk, breaded with a blend of cracker meal and repeat.
Then fry till golden brown.
