You said you added "spice"...uhh..what "spice" did you add.  Deb gave me a meat grinder for such stuff as this and I'd like to try makin' sausage patties since I don't have a tuber.

Wonder if I could smoke the patties in the MES at 180* with the amazin smoker...

Yes, pork side (also called pork belly) is from the side of the belly area.  Jowls are the lower cheek or jaw muscle. They make excellent bacon as well.
