I went to the store to buy pork for sausage but all the butts were trimed and didn't look good so I bout 1 lb hog jowl and 5 lbs of pork loin.  Gound the hog jowl up first then ground the prok loin mixed well added spice remixed with the mixer and made patties so I could freeze them and split the batch up in vacuum bags.

Really came out well if I do say so myself ;)

Do hog jowls differ from side pork? I have heard of them, but have never seen them in a store

That does look great!  I always trim the fat, and grind pork loin for sausage these days, and use bacon for the fat.  Then because we have a large sage bush in the garden, I throw in fresh sage leaves as the meat grinds - we love sage in sausage - gives it an extra savoriness.

I'm going to start a list of the different rubs and spices I'll need to try - In addition to WoW, Super Pig is another that I've seen quite a bit in the forum.

Well loins didn't have enough fat so I thought Kimmie LOVES hog jowl so why not use it.  Really worked good, looking to make more after my surgery

That really looks great Tommy! I have a brand new grinder attachment for the Kitchenaid sitting
in the corner wondering when I will ever use it. Got to get up off my butt and do some sausage
and burgers now, since it looks like I will be off of work until the "clowns" (sorry to offend the clown profession) ;)
in Washington DC get their act together!  >:(
