I dialed her in at 250 on the dome and she held steady for the whole cook.
These were close to 3 lbs of cut meat total. I figured I would let it run for 3.5 hours and then check. Kinda like doing ribs.

No sauce, we like them naked. The smaller one's were a bit dry but still very good. Next time I'll using the Maverick and probe the meat.

The Mac & Cheese recipe came from the new Weber book titled "Smoke". Sounds like someone I know here.
