Well, you try to be creative. If you know that you do not have enough meat for one person's meal what can you do to stretch the use and feed two people? You make eggs benedict with chuck roast meat.
What you do is get a couple of homemade biscuits that you have stored in the freezer, and place the meat on top.
As a side dish, you make some creamed spinach.
Then you start poaching the eggs.
Then you make some hollandaise sauce to put over the eggs.
Then you plate the dish for dinner.
All I can say, is that my wife and I enjoyed this very much as we have not had eggs Benedict for almost 2 years.
