Looks delicious!  Most American beef (in supermarkets) isn't graded and is "factory" beef full of injected water and chemicals fed to the cattle before slaughter.  It can be tasty but inconsistent.  To get excellent beef, we have to seek out specialty butchers who obtain raw material from ranches that custom-finish the fattening process in several different ways. 

Canada, I think, has much tighter standards on what food can contain.

How about that field trip be our Canadian friends coming to the Southern US with some "smuggled" meat?  I lived in NW PA (AKA Canada South) for enough years to not realize how much better we have it right now weather-wise.  ???

I can handle it!  But, not until next summer.  Right now a trip to a far southern clime would be much more appealing.
