Smoked salmon, Kummok style

Did smoked salmon on T-day in addition to the turkey, and it turned out better than the actual bird  ;D

Used the Auber dual probe to control the Bradley...

... marinaded fish - coho from a friend in Alaska...

... after a couple of days in the marinade, developed a pellicle for 24 hours...

... the finished fish - like candy - sweet, spicy, full of salmon goodness

Have used Kummok's recipe often in my Bradley and it's a winner.  Great job on that salmon!
