Cheese Steak Hoogie on my Tailgater

I usually do this cook on one of my charcoal grills but decided to try it this time on my newer Green Mountain Davy Crockett tailgater pellet grill. It came out well and will be placed on my list of items to cook next year at our tailgating and camping events.



I trimmed the fat off of the outside of my ribeyes and then prepped them with some garlic salt and fresh ground black pepper and they were ready for the fire.



I rolled the little cooker around to my cooking patio and for power, I hooked up my 12 volt jump starter to the cooker. Was a very cold morning at 16 degrees at the start of my cook. Should warm up later.



I gave the steaks a light sear (about 2 minutes a side) on a hot griddle in the cooker as I like this additional flavor in my steak sandwiches.



Next up was a skillet of onions which I will caramelize on the grill.





When my onions were about done, I moved them over to one side of the skillet and added some mushrooms. I then added another skillet of sliced bell peppers. I also added my cheese to get it melted for the sandwiches.



I grilled or toasted my hoogie buns and I was ready to put this thing together.



I added a generous amount of that great sliced ribeye on each bun.



And then some caramelized onions.



Next up was the mushrooms and bell peppers.



And then some hot melted cheese.





And that my friend is one fine tailgate type of sandwich.
