Chicken Andouille Gumbo

Found this recipe at The Spice House. I get a lot of my spices here. Good stuff..

Started with a 6lb yard bird. Cooking and making the broth here.


Homemade Andouille and veggies.


Sauteing the Okra.


Chicken is done. Broth was strained and reserved.


Made the roux and then added veggies.


Added the andouille, herbs, tomato and broth. Gumbo on the right, Smoking Don's chili on the left. If you haven't made SD's chili yet, I suggest you do. It's excellent.

I only added half the cayenne to the recipe because I had a lot of heat in my andouille.
