I am finally getting around to posting pics from the bacon I made from a fresh side when my daughter and I split a hog.  I used 10.5's recipe with the addition of some cracked organic pepper I had just received.  The results were fantastic. The only thing I would do different next time is heat the syrup before adding to the dry mixture as I think it would be easier to mix and apply to the side.  Also for the sugar I substituted 1/4 cup of brown for maple powder so I had a combination of both.  10.5 said he uses both.

The hardest part was slicing...found it worked best when frozen or nearly frozen.  The bacon is longer than my slicer so I had to stand the bacon up and lay it down on the blade.  Is there an easier way to do this?

Looks fantastic.  As for slicing, a longer knife or a slicer...  I would look at a long "brisket" knife.  Always good to have multipurpose tools.  Victorinox makes great (and at least comparatively inexpensive) knives.

Good looking bacon Mohuka.

Yeah it's tough slicing full sized bacon slices on a smaller home slicer.  Before I finally broke down and bought a used commercial slicer, I was going to play around with this idea:

Depending on the size of your slicer, if you could make some kind of an angled jig that would fit on the sliding table where you place the meat, you could then slice the bacon at an angle, increasing the slice length.


Of course it would need to clear the blade and be secured in some fashion, but it's an idea.

Thanks for all the good comments and suggestions....I forgot to mention that I smoked for 2 hours with Maple in my Bradley...other than adding the cracked pepper I followed 10.5's recipe

Looks simply delicious!  One of these days I'll get enough time to try some of the marvelous recipes I see here at LTBBQ, however there are so many I want to cook, I don't know if I'll live that long!  :D
