need a meatball recipe

making my own monik balls tomorrow.  why not make my own meatballs.  I'm heading to Costco in 1/2 hour.  need recipes for some great meatballs.  thanks.  I use my phone to pick up the recipes will I'm at Costco.  cya all at Costco everyone.   ;)

Start with 2 lbs ground beef and 1 lb Jimmy Dean Hot Sausage. Drink 1 shot of creativity with a Fat Tire. Add garlic, onion, this weeks favorite rub, a shot of BBQ sauce, handful of oatmeal and 1 egg. Repeat creativity procedure & fridge overnight if you can.

If you are short on time, I like the Wal-mart bagged brand of meatballs.

I do like smokin soons method of preparing the meatballs though  8)

one pound 80/20 ground beef,  one egg and 1 1/2 cups of Italian bread crumbs.

 Mix well and bake till 106 IT or you can even fry them if you want to

Lots of good ideas already here, so I'll just chime in about avoiding mistakes that make for DRY, mealy, meatballs.  Watch the amount of binder (usually bread crumbs or oatmeal).  Too much will make them dry.  Then, use ground meats that are relatively high fat content.  80/20 beef, for instance, as a minimum.  75/25 even better.  Fat equals flavor and texture.  A couple of weeks ago I made some with 93/7 ground beef on the theory I was being healthy.  Uck  :(  -- they were dry and grainy.

I usually soak the bread in milk... next time I'm going with your buttermilk idea!
