At 2:00 am when the dog went out to go and his belly was in the snow I knew I would spend most of today blowing and shoveling snow. It started last night at dusk; his tracks were covered this morning. I don’t know how much we got but I would say at least 6 inches.
I had some breast and a leg left for some tacos tonight but if the kids come down I would need more. I bought a 2 pound pack of thighs for some extra. It was nice enough I wanted to do them on the smoker. I seasoned them up with some Penzey’s Galena street rub and let them smoke for a half hour then eased up to finally get 350 to 370 deg. grill level It took about another 1 ½ hours for 180 deg. IT.
They looked so good I wanted to eat one but resisted and had the skin instead. I nuked them until nice and crisp. I didn’t cover them but got the microwave cleaned up before the wife saw it! They hit the spot. After the thighs cooled some I pulled the meat off for my tacos tonight.
The wife and I had the leftover kraut meatloaf, mac and cheese and beets for our supper. I didn’t take any photos; I didn’t want Pappy to go into convulsions when he seen the beets!
