A couple of years ago I smoked some eggs, gahhlick and jalapenons, bologna and onions..used a basic brine and let them sit for about a month..can't remember whose recipe it was, maybe Savannah smokers, but they have to sit..I did a 2 hour smoke of fruit wood, pear and with smoked cheese on the side..the guys killed them in 1 eating.
