Wednesday we usually have the daughter in law and grandson for supper but they had other plans so my wife said she would cook. She did a great job, something a little different and tasty. She had Cuban sandwiches from Sandman’s carry out! They tasted good!
Last night the grandson’s Dad had to work and his Mom had a meeting after work and would not be here until after 7:00. I had taken some frozen chicken breasts out to thaw and had just enough rice leftover for the three of us. I would have some chicken fingers and rice. I baked a loaf of Ciabatta from my Artisan bread in 5 dough, to have with supper.
When my chicken thawed enough I saw it was thighs and not breasts so my recipe changed to stir fry. I seasoned the chicken with Mo Rockin seasoning, sliced some onions and peppers. I used some dried garlic flakes, too lazy to clean and chop some.
It went together pretty fast and tasted good. This was something on the healthier side for us; well it is if you don’t use all that butter on your bread!
