Butts for Marti-Gras

Got notified this AM that crawfish were over $4 /lb  :o
New plan for Sat. Parades BBQ!
Could I smoke some butts.
Got 3 fresh butts about 6 lb.each after work
Slathered in mustard , Tim's BBQ powder ( fine swine & bovine)
No time for wrapping etc. & on the smoker!

These won't be served till Sat. Pics from the weekend ( PG only  ::)) & the eating to follow  8)

That still beats the $10/lb we pay for them out here in Vegas.  At least they are fresh from Louisiana, flown in from Louisiana in the morning, boiled the same day, and served the same day.

BTW: The butts look great.  ;)

Sounds like a perfectly fine substitute for the craws.

I could stand  $4 a pound up here in the dead of winter, especially if they are not little tiny hard shelled mudbugs. I can do about 5 pounds by myself, so $20 a sitting, along with 4 or 5 beers that would be a cheap night out.

You're lucky if you even see a cocktail waitress come around and take a drink order around the penny slots.   ::)

Smoke , I used oak chunks.
Cooked on Kamodo for two reasons
 1) it was cold last nite.
 2) butte were for serving Sat. Too big to cook from time I got home to when I went to bed & not big enough to cook overnite ( they were what I could find) . The Kamodo is fairly air tight & fire goes out soon after vents closed , but with it insulated it'll cook a couple hours after fires out. This morning they are mostly cooked , very chilled ( got into 20's last PM , & ready for packing. Sat. AM I'll heat up in the oven , pull & serve!

That's how a restuarant (Lola's Louisiana Kitchen) here in Vegas does it. Every Friday during crawfish season they fly them in live for crawfish Fridays. They also charge $10/lb, but they sure are good, I guess it beats the price of a R/T ticket to and from New Orleans.

Lots of other food but butts disappeared quickly
