FINALLY got around to doing some ribs on the new grill. Actually first time doing baby back ribs. I was debating on how I wanted to cook them.
Boil them first on the stove? Nope.
Wrap them in tinfoil, 3-2-1 method (didn't know what that was at the time). That thought did cross my mind.
Settled on the indirect method (no foil). Two burners going (both on low) to maintain about 225*. Pan of water under the ribs. Apple chips in the smoker pan. Cooked for three hours. Put the sauce on the last fifteen minutes.
They were tasty, good smoky flavor and meat was moist and somewhat tender. NOT as tender as I was hoping for. Open for suggestions. Thinking about the 3-2-1 (actually 2-2-1 on the gasser) next time???
