I hadn't done these in a while & had a hankering for some applewood-smoked chicken leg quarters with stuffing. As it happenedChicken leg quarters were on sale at the grocery... Perfect!
I mixed up a batch of cornbread stuffing - wheat bread, corn bread, some sauteed carrots, onions & celery, seasoned with salt, pepper, thyme, rosemary & lots of sage, all held together with a couple eggs.
From the outside of the leg joint create a pocket under the skin & fill the pocket with stuffing.
Season with a little S & P then put them on the MAK in smoke mode for 20 minutes, then bump the temp to 400° for about 45 - 60 minutes until the legs are done and the skin is a nice color (these were an I.T. of about 185° or so).
I love the chestnut brown color and deep flavor that applewood gives. They were served with some Broccoli & Cheese Sauce.
