French Onion soup for a cold and wet day

It was wet, windy and cold so I thought why not make French Onion soup.  So I did and man it hit the spot

Here is the recipe

4 lbs onions
8 cups of beef broth
1 TB spoon of sugar
6 TB spoons of butter

I used Italian Bread and Provolone   to finish

I cooked the onions and butter for 1/2 hour with a lid on the pot then removed to finish them til brown.  Once brown I added the sugar and beef broth and let it simmer for 30 mins then toasted the bread added it to the top of the bowl then added cheese and baked til done

 French Onion soup is my favorite also. I even went out and bought the bowels for it that have the handle  ;D

This was one of the best I have made so far.  Not sure if sweating the onions with the top on for the first 30 mins has any affect but I think it does wonders for the sweetness of the onions.  I did this recipe before and the onions were no as sweet as these, but I will keep doing it this way
