Nepas:  What do you have to pay per pound for gator tail?  I went right by Gatorama in Central Florida, and should have stopped to check it out.

Got this gator at Rouses mkt last month when i was in NOLA, Was like $12-14lb

Here where i am in goes up and down between $16-22lb

Got my Andouille mix, paprika, cure #1



1lb chopped gator added to 4lb ground pork.



Mix the cure with 1/4 cup cold distilled water for better distribution.

Paprika being added. My Andouille mix already has cayenne.



Mixed by hand and ready for the bag.



Fridge overnight to let it all come together.
