My neighbors are having a baby shower on Saturday for about 50 people and asked me to make pulled pork. Not sure exactly why, but I said I would (probably because he bakes great bread that SWMBO likes and he begged). Figured he needed about 12-15 pounds of product (they're serving other meats and also wanted some leftovers) and decided I needed a few pounds to replenish my supply so I went out and bought four butts totaling 39 pounds ($1.82/lb including tax). I knew that much at once would take 6-8 weeks in the Bradley (OBS) so decided to smoke outside and then move indoors to the oven and crockpots.
Sunday - injected with CT and whacked 'em with Jan's Rub.
Back to the fridge to rest up for a couple of days and try to guess if the OBS will hold all that meat.
Today (Tuesday) - added some more rub and ran them in the OBS (it all fit - barely) for five hours of maple and (mostly) cherry (They were on the front of the bisquette shelf).
The two larger butts (about 11 pounds each) went into the 225
o
oven on a rack over a drip pan for an overnight stay while the other two (8-9 pounds each) bedded down in slow cookers on LO.

I use CT as a slather but never injected. Bet that is delicious after a long time cooking. Thanks for sharing and I would love to be there to sample. Our son lives on the big island and will never return.... Phil

We're baaaack! Nine hours in the crockpots for the smaller ones and they were falling apart. No photos because they actually did fall apart when I was testing them and I didn't see the point of taking a picture at that juncture. I poured off and defatted the drippings (4 cups fat, 4 cups "juice") and added some apple juice to moisten the oven butts in FTC and mix in when pulling.
The two in the oven took a bit longer and were ready for FTC after 12 hours. Both falling apart done at the same time - how 'bout that?
Had another few cups each of fat and drippings in the pan. After FTC, I mixed, pulled and packaged (after a taste or two for quality control - great stuff).
For the record, the net weight of product was 25.5 pounds plus a quart of "extra" drippings to use for soups, sauces or other stuff later. Came out to (with all the ancillary expenses) well under $4 a pound with a 65% yield (I expected a lower yield - must have been that "Supreme Trim" they advertised on the package).
My work here is done. Better go clean up the mess in the kitchen before SWMBO gets home and sees it and and slaps me into the next county (which is 35 miles away across a pretty rough channel between the islands).
... and, tee, while I don't do a lot of the fancy stuff (because I'm not usually smart or focused enough to keep track of more than about five ingredients), this wasn't my first rodeo.
