Doing my last 5 lbs of venison  :'(

Super duper secret receipt SS mix  :o



Cure mixed with 1/4 cup distilled water and the dry with 1 cup distilled.



Stuffin time.





Double chub chubs and a cloth bag.



Prob going to take most the day and into the night.

This goes in the file of bad casings.

I knew from how solid the SS still was in the casings that something wasnt right.




Peeling the casings i knew it. The casings were to old even after a soaking of an hour  :'(



These went right from the cutting board to the trash  >:(



Now the cloth bag turned out great.







Oh well 1 is better than none  :-\

Going to paper bag the 1 and relax it in the fridge for a couple days.

Can't you salvage the ones that that stuck to the casing - maybe cube them up and vacuum pack?

I wondered the same thing.  Was there something else wrong with the ones you threw away other than the synthetic casings didn't peel right?

I love the cloth casings. You sold me on using them a couple years ago. Superb smoke penetration, a great rustic look and they never get old.

why couldn't you eat the other ones?  the last one looks the best but put it between two pieces of bread and who's going to know?  i though they all look good.   :)

Did you let the SS cool completely before peeling the casing?  I had his happen to us once but since then after the water bath and blooming a bit they go in the fridge for 12-24 hrs before cutting.

Do you think this would have helped any??  I have used SS casing that were 4 yrs old before and never had a problem.

Not meaning to sound like an @ss. But yes i always let the sausage bloom (cool) been doing this for 30 years and this is the 2nd time this has happened.

The SS tasted great. I just got pi$$y and tossed-em. These were supposed to be vac sealed and sent to Texas for a friend. Wouldn't have been good to send like messed up.

I have a friend who is a seamstress, she makes all my bags 20 dz at a time. I will post pics.



I should have known the casings were bad when i felt them b4 soaking, they just didnt feel right.

Oh well thats how it goes at times.

Move on to another sausage venture  ;D

No problem at all, just trying to help.  Like I said we had the same thing happen one year. 

It may be hard to explain but how did you know your casings were bad? We have some that are a couple years old and I would like to avoid this.  How old were they?  Maybe I should throw my casings and get new for this coming season.

You should have sent them anyhow Buddy. I don't think he would have minded. Besides a mistake every now and then makes you look human SUPERMAN!! :P :P ;D ;D
