Trail Bologna -- updated

I bought a kit at Gander Mountain a while back and since I've got some time off this week I thought I'd give it a try.


10 lbs. ground chuck/pork butt mix using 3/8 plate.


Mixed the cure with 1/2 cup distilled water and mixed into the meat. Mixed the seasoning pack with 1 cup distilled water and let sit in the frig for 30 minutes before mixing it into the meat. Then ran the meat mixture thru the grinder using the 1/8 plate.

Got the Kirby cannon loaded and ready.


Stuffed


Fried up the leftovers for a nice sandwich for lunch.


I'll let these sit in the fridge overnight and smoke first thing in the morning.

Yes it is. This is only the second time I've used it. The first time didn't go so well but I'm slowly getting the hang of it. Can any of yall kirby cannon users tell me the best way to fill the stuffer without leaving any air pockets.

I have the 30 lbs. plus one and all I do is hand feed it into the tube. I only do ten to fifteen lbs. patches at a time so the plunger is never at the bottom so I can reach in and pack the meat tight against the plunger. If your getting air pockets, Kirby has made what he calls a fart tube that goes on the stuffing tube. I know there is a video on it someplace but I can't find it right now. I don't seem to have that problem with the air but i'm sure that could help you out.

Mine is the 15 lb stuffer. I need to find a good way to get the meat all the way to the back. I couldn't even fit 10 lbs into mine because I couldn't get it packed tight enough. I've seen the little "burper" device kirby uses in his videos. Another great idea from Kirby. I need to figure out how to make one.

When I bought mine he had sent me a piece of I think ABS tubing that had a round plate the attached to it. You could than use it as a ramming rod. After stuffing you could undo the plate and attach a nozzle to clean the inside of the cylinder. I used it once and that was it. I don't even know where it is now.

You should have received a meat loading tool. Here is what it looks like when assembled. The disk threads on to the pipe then the end cap threads on the end to keep meat from getting into the tube. This same tool is used to wash the stuffer when done stuffing. The cap is removed and the spray head attached. The hose fitting goes on the other end. You roll logs that are ½ the diameter of the pipe and about 8 inches long. Slowly push them into the pipe and allow the air to slip over the top of the disk with the flat space in the disk facing up. Here is a vide that shows how to load the meat. I am using an older tool in the video but the plan is the same. I also am including a  few pictures of the loading tool.

Hey Kirby thanks for the info. I do have the meat pusher and the spray head for cleanup. I didn't think to roll the meat into logs. I was just trying to grab a handful and cram it in there. Next time I'll roll it into logs. Do you have to fabricate the fart eliminator thingy or is that something I can make? Also in one of your videos you have installed an electric pump to pull the water out instead of the drill powered pump. What type pump is that? Did you get it at Home depot or is it something special ordered?

Watching this one with great anticipation!

I grew up eating this stuff - LOVE IT!!!  We drive past the Troyer's factory near Trail, Ohio (where this Bologna gets its name) just about every time we take a drive to Amish country.
