Dried Beef

Got a batch of dried beef going this weekend. Cured eye round roasts for seven days with MTQ and brown sugar, injected with the liquid that had accumulated in each bag after 3 days. Rinsed and soaked last night, spiced with CBP, onion and garlic powder, racked and refrigerated overnight to form a pellicle. Went in the Bradley this morning at 130 for 2 hours, 140 for 2 hours and 150 for 2 hours, then on the Rec Tec at 180 to get to a 150ish IT, which is where it is now. More to follow!

Sliced and packaged. Here is a recipe for a sandwich spread that is the perfect use for dried beef, even better than SOS:
Heat a can of evaporated milk in a double boiler and add one lb of cubed velveeta. Beat an egg and temper with a few Tbs of the melted cheese mixture then stir in the egg along with 10 or so slices of chopped dried beef. Cook until thickened. If you can find them in your neck of the woods serve this on Dutch rusk buns. You can cool this in the fridge and it keeps for a long time, or so I am told. Wouldn't know 'cuz it doesn't last long around here!

Bella is catahoula. We think full-blooded but can't be sure without dna testing. She came from a rescue shelter. She was quite a hands full but with obedience training she has settled in well. They are wonderful family dogs.
