Got a batch of dried beef going this weekend. Cured eye round roasts for seven days with MTQ and brown sugar, injected with the liquid that had accumulated in each bag after 3 days. Rinsed and soaked last night, spiced with CBP, onion and garlic powder, racked and refrigerated overnight to form a pellicle. Went in the Bradley this morning at 130 for 2 hours, 140 for 2 hours and 150 for 2 hours, then on the Rec Tec at 180 to get to a 150ish IT, which is where it is now. More to follow!
