Looks great Tom, but never trimmed fat of one like that before. I kept the fat on for flavor, but then again I smoked mine then seared all side for a nice crust. Still though a great job!

Thanks for posting. I usually use that for jerky but that is a great looking roast beef. I lived in Buffalo for several years and now that I'm in FL finding kummelweck rolls is not easy so I made some of my own. http://www.letstalkbbq.com/index.php?topic=15872.0
